Recipe Roundup- Disneyland White Chocolate Raspberry Cookies


Hi, I'm Staci from The Potters - Place where you can find things that we are making, crating, and DIY-ing.  We LOVE Disneyland, especially their treats.
Last year we discovered the white chocolate raspberry cookies at Pooh Corner right next to the Many Adventures of Winnie the Pooh.  To say that they are good is an understatement.  They are down right AMAZING.  It is a must every time you ride Splash Mountain (which is also near it)!
Anytime one of our friends go to to Disneyland I ask them to bring me a cookie but it never seems to make it home!

I HAD to make them so I adapted this recipe from mybakerlady and it is the closest recipe I have found.  I added my own touch.  Give this recipe a try and then the next time you're in Disneyland try the white chocolate raspberry cookies at Pooh Corner, see if you can tell the difference!

Disneyland White Chocolate Raspberry Cookies {copycat}
Cream together,
1 stick of butter - room temp
1 egg, and 1 egg yolk - room temp
1/2 c sugar
1/2 c brown sugar
Add,
2 1/3 c flour {you can always add more if needed!}
1 t baking soda
1 t vanilla
a dash of salt
Mix all together then add
1 cup white chocolate chips
{Disneyland used HUGE white chocolate chips but I couldn't find any}
1/2 c milk chocolate chips
Set aside.
Now, take fresh raspberries {6oz container} and mush them up.
Then, take your dough and divide it into 4 sections.
This is an important step.
You could just mix the raspberries into the entire mixture but, if you do, you will have purplish cookies and they won't look the same as Disneyland's.
Take 1 section of your dough and 1/4th of the raspberries and sightly mix them together.  Not too much.  You just want it to swirl through the dough.
Now, with a scooper, scoop the dough out into individual cookies on your baking sheet and bake at 350 for 8-12 min.  Watch them closely so they don't burn!

Pretty darn close!  Yep, I do photo shoots with food at amusement parks. I am a blogger!!!
