Creamy Chicken Casserole






What is it about casseroles that are so dang good? I can't get enough of them. This Creamy Chicken Casserole is a new favorite of mine. This recipe is delicious as it is but can also be tasty by getting creative and adding other flavors. For an extra kick I am going to try mixing in a little ranch flavoring next time I make this.


Creamy Chicken Casserole
2 cups cooked, diced chicken
1 can cream of chicken soup
1 1/2 cups sour cream
2 cups crushed Ritz crackers
1/2 cup Country Crock, melted

Mix chicken, cream of chicken soup and sour cream in a large bowl. Spread mixture in a greased 9x13 pan. In another bowl mix crackers with the melted Country Crock and spread over chicken mixture.
Cover with tin foil and bake at 350 degrees for 15 minutes. Remove foil and continue baking for 15 more minutes.

The one thing that really makes me love this casserole is the crackers and Country Crock on top. It just wouldn't be as good without it.
