Confession


I have a little confession to make, I am totally intrigued by the Ab Circle Pro. I know, it's a bit silly. Every time the commercial comes on I find myself watching it and wanting one. Travis laughed at me when I told him and I really don't blame him, I know its silly.

Last Week

Last week was such a busy week!
  • Took care of two kids both under the age of 15 months
  • Taught my niece how to make a rue, potato soup, popovers and crepes
  • Started Brody's scrapbook
  • Did a little house sitting
  • moved
  • Went to a Halloween party
  • Played games with friends
  • Did some fall shopping
  • Introduced Brody to Playhouse Disney

Last week was definitely a stressful week. I think I officially have anxiety now.

Blogger's Recipe Roundup-Pumpkin Cheesecake Pie



Hannah from the blog Sherbet Blossom is sharing her pumpkin cheesecake pie recipe with us.

Pumpkin Cheesecake Pie

1 (8 ounce) package cream cheese, softened
3/4 cup packed brown sugar
3 eggs, beaten
1 (15 ounce) can solid pack pumpkin puree
1/2 cup heavy whipping cream
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt

Preheat oven to 350 degrees.
Make crust. You can make a regular or graham cracker crust. Either
works.
Combine cream cheese and brown sugar. Beat until smooth, then add
eggs, pumpkin, and cream. Mix well. Stir in cinnamon, ginger, nutmeg,
cloves, and salt. Pour mixture into pie shell.
Bake for 35 to 40 minutes, until set in center. Chill before serving.
Garnish with whipped cream.

Blogger's Recipe Roundup-Cereal Muffins



Today's recipe is cereal muffins from Little Birdie Secrets.




Cereal Muffins


2 c. flour
1/2 c. sugar
3 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 c. milk
1/4 c. oil
1 egg
1 c. ready-to-eat cereal
Mix all ingredients together, adding the cereal last. Pour batter into a 12 cup, greased muffin pan (or use muffin liners). Bake at 400° for 25 minutes.

This is a great, very simple recipe for muffins. I love it because I always have all the ingredients on hand and can whip them up in a moment's notice. They are a great addition to almost any dinner, as well as a simple breakfast. This recipe is also a great way to use up any "almost gone" cereal. You can use any cereal you have on hand, but my personal favorites have been Blueberry Morning, Raisin Bran, or Honey Bunches of Oats. They are delicious served with honey and butter...or honey butter!

Blogger's Recipe Roundup-Chicken Tomatillo Soup



Caroline of Armelle}the blog is sharing her favorite soup recipe with us today.


















{chicken tomatillo soup}
serves 6-8 people

saute in big stock pot approx 10-15 min:
1/2 large onion, diced
2 garlic cloves, minced
1 lb tomatillos, diced (about 5 medium size, don't forget to remove the husk and wash)
1 tablespoon cumin

add the rest & simmer approximately 15-25 minutes:
3 chicken breasts, cooked & shredded
1 49 1/2oz chicken broth can
1 16oz fresh salsa from the grocery store deli
1 15.5 oz cans yellow hominy (drained)
1 15.5 oz cans white hominy (drained)

**serve with:
blue or white tortilla chips
avocado slices
white rice
shredded cheese
sour cream
fresh lime juice
**these add-ons are a must! [they make the soup!] i like to add white rice to the soup, then lime juice, sour cream, shredded cheese, and avocado slices. then, i eat it with tortilla chips.

Blogger's Recipe Roundup- Gorgonzola Pear Salad

Kami of No Biggie blog will be showing us how to make her gorgonzola pear salad with candies pecans.

Here it is in a nutshell: The ingredients: green leaf lettuce, pears, avocado, gorgonzola cheese crumbles, purple onion and pecan pieces.

Carmelized Pecans: This is the tricky part. You place the pecans in a hot pan on high heat and you have to stay with it, constantly turning them around. Once you start to smell the pecans (you are going to love this smell), then you add the 1/4 cup sugar. Constantly stirring once again. Watch the sugar turn to a liquid state and toss the pecans all around in the syrupy goodness, until they are all coated. Then remove them from the hot pan and let them cool. Keep them at room temp and then add them in at the very end, just right before tossing.
Here are the dressing ingredients all lined up, they are all listed below.

You can make this ahead of time (maybe a few hours) I would not refrigerate the dressing.

Toss everything together just right before serving, and ENJOY! It's a good one.


The Recipe:
Gorgonzola Pear Salad
1 head red leaf or green leaf lettuce (preferably red leaf if it's available)
3-4 pears sliced (and peeled - optional)
1 pkg gorgonzola crumbles
1 avocado sliced
1 purple onion sliced thin

Carmelize together:
1 pkg pecan pieces
1/4 cup sugar
The Dressing:
1/3 cup olive oil
3 tbl. red wine vinegar
1 1/2 tsp. sugar
1 1/4 tsp. mustard
1 clove garlic (or garlic powder)
1/2 tsp salt & pepper
